How To: Breath of the Wild Cookie
In an earlier post, we described the finished cookies for a Portland wedding. In this post, we’ll share some of the details.
We altered a sugar cookie recipe by adding some almond flour (decreasing the gluten content overall). This helped us create a cookie that had a wonderful flavor, was chewy, but would hold the imprint of the custom stamp.
The cookies were made with a modified stamp we found online. Laser cut stamps tend to be very sticky, so we trimmed off the excess ring pattern around the edges before using, as we only wanted the center pattern anyway. This made it easier to use.
We rolled out the cookie dough to a consistent width, cut them with a regular cookie cutter ring, and froze them. We like working with very cold dough as it stays stiffer and is easier to work with. We lined our pans with parchment paper so the cookies would slide off easily when still hot, ensuring the cookies were not mangled as they cooled.
Stamping the cookies was simple, once we realized we needed to dust each cookies to keep the stamp from sticking to every cookie. We used powdered sugar and a fine sieve to keep the sugar to a minimum. We stamped a batch of cookies, getting them into a 350 degree oven immediately for 12 minutes. (We’d experimented with timing from 10-15 minutes and settled on 12).
