Creating a one-of-a-kind wedding cake using fondant 

 

Brides and Grooms have a vision.

The perfect day, the ideal partner, wonderful friends all gathered together to celebrate. Everyone will enjoy themselves, eating great food and being part of a beautiful experience.

The centerpiece of the dessert table is the cake. One may not recall the vintage of the champagne that day, but one will always remember the cake in all it’s finery, floating above the table and being the center of attention when it’s finally cut. It may be a single layer or many tiers, but it must be memorable and blend with the wedding, in our opinion.

To create this vision, we used rolled fondant in custom tinted colors to create shamrocks, French violets and the occasional 4-leaf clover. The roses were piped in buttercream, as were the white petals cascading down the sides of the tier. We created over 1000 individual flowers and shamrocks, drying them in advance and meticulously placing them on the cake on the final day. The colors matched the wedding theme colors exactly, and the floral design coordinated with the wedding dress. This wedding cake tier was the top of a 3 tier cake for a wedding party of over 125 people.
