Not every wedding is traditional, and we agree a wedding can be more than just a ceremony…it can be fun!

Immediately following the pandemic, a Portland couple wanted to have a two day celebration and themed event. The wedding was outdoors in a beautiful wooded setting, with huge trees and a stream, and the lumberjack idea was a perfect.

Being in late summer, the days were hot and sunny. To be certain the wedding cake and desserts would withstand the heat, all icings were made of Swiss meringue buttercream. Meringue butter creams (French, Swiss, German) have a higher melting point than American buttercreams, and with the forecast being in the 90’s that day, we decided to upgrade all the desserts to the Swiss meringue, even the filled cupcakes. We assembled the desserts table, placing the wedding cake itself on a separate table (near the fan!) just to be safe.

You’ll note there is a lot of “single serve” items - this was a nod to health and safety, but also to allow the guests to easily take the desserts home after the event.
