Lumberjack “Log” base cake
You have not truly lived until you must deliver a cake that looks like a slice of a log...!
The lumberjack wedding cake was spectacular, being three tiers of cakes, each a different flavor, color and theme.
This is the base tier. It was 18” across and 6” high, weighing in at over 10 pounds alone. The cake inside was designed to show a buffalo plaid pattern when cut (3 color plaid) and the filling was ganache (dark chocolate truffle).
The sides are hand-rolled chocolate fondant. Rest assured this was not the first type of technique we tried! Many hours of experimentation in the chef’s kitchen, and many pounds of chocolate later, it was found this was the most aesthetically pleasing and the best type of chocolate to use in the heat.
The top of the cake was spun fondant, painted with special cake gel colors to resemble the grain of the wood. Various sugar elements were used to create the illusion of depth and knotholes. The moss is crushed pistachios, and the nest is made of piped meringue baked at a very low temperature. The Robin’s eggs are almonds chosen for their shape then candied and painted with food coloring gel.
Because every log has forest creatures living in it, of course.
