How To: Lumberjack cupcakes

 

Making a unique cupcake can be a lot of fun!

Let’s dive into the Lumberjack theme from a Portland wedding, keeping in mind that this is also great for a kid’s birthday party.

We wanted something that was instantly recognizable as part of the Lumberjack theme, yet easy to transport and simple to assemble. We settled on Maple Blueberry Pancake cupcakes. Blueberries worked out being culturally part of the northwest, as well as being part of a beautiful design for the dessert table.

The cupcakes were vanilla and the frosting was piped vanilla buttercream using a very small star tip. We griddle fried dozens of tiny, authentic pancakes and found toothpicks with “ax” ends. If we hadn’t found them, we’d have made them.

We assembled the cupcakes onsite: skewer a blueberry through the top, add a few pancakes, and stick them into the middle of each cupcake.

Just before serving, we drizzled real maple syrup on the pancakes creating that nostalgic flavor of breakfast. You can substitute other fruit if you like: sliced banana, half a strawberry, sliced side down, or none at all!
