Special Order: Matching a patch
One of the best type of orders are custom designs. Recently we were tasked with creating a few dozen cookies for a sporting event, and they had to match the club insignia.
The design was deceptively simple: a red circle pattern on a white sugar cookie.
Hardest. Pattern. Ever.
Square is easy. Lines are simple. But to achieve a perfectly round piped design required intense focus and practice. Fortunately there was ample time to test out the cookie formulas, mix custom red colors to get a match.
Piping a free-hand circle is not for the faint-hearted: you have to hold your breath while you do it, be quick, and have the power of your convictions. One stray tweak and you have an oval, or worse, jagged lines.
After much practice, 48 cookies were baked, piped and packed. How can you tell a good pastry chef from a bad one? The good chef feeds the messed up cookies to the chickens.
